Quick and Easy Low Carb gluten free Protein Powder Bread
1/4 cup flax seed meal
2 tbsp pecan or almond meal
1/2 cup protein powder -- plain or vanilla (we use bioplex 100% whey)
1/2 tsp salt
1 tsp baking powder
1/2 cup heavy cream (or heavy cream diluted with water to make ½ cup)
1/4 cup seltzer water (club soda)
Preheat oven to 350 F. Generously butter a standard loaf pan. Beat all ingredients for 1-2 minutes using a food processor or electric mixer. Pour into pan and bake 25-30 minutes until middle of loaf springs back to the touch.
(Get creative with this! I know for a fact that Dr. Elliott made an awesome coffee cake type thing with this same basic recipe.)
