Low Carb Gluten
Free Microwave Lemon Cake
2T melted butter or coconut oil
1 beaten egg
grated zest and juice from ½ lemon
(add lemon extract for added lemon flavor)
splash vanilla extract
1/3 cup splenda
2 T coconut flour
½ t baking powder
1 t oil or mayo for moistness
dash heavy cream
Mix is all up and microwave for 1
minute 20 seconds. Check. If still moist in the center, continue
microwaving in 20 second intervals until center is cooked. It comes out
nice and spongy.
