Almond Meal Pizza Crust

 

For 1 pizza

 

2 cups ground almond meal/flour (can also substitute ½  c of this with flax meal if desired)

3 eggs

1 T olive oil

½ tsp salt

1 tsp xanthan gum (not mandatory but helps)

Herbs/seasonings if desired

 

Mix together.  Roll out between two oiled pieces of parchment paper.  Peel off top layer and place bottom paper and dough on baking sheet.

 

Bake in preheated 350 oven for 8 minutes (top should be dry).  Let cool.  Top as desired, then bake at 350 for about 15-20 minutes.  Increase the heat at the end for a few minutes to broil to brown the top of the cheese a bit if desired.
